Okay, I am a HUGE pasta fanatic.  It is the one thing I truly miss about being a R.C.  I know that I can do Dreamfields, etc. but still even that has too many carbs, and I hate that I can’t reheat it.

First someone recommended Zucchini noodles to me. I tried it – but it wasn’t pasta-like. It was literally cheese on top of Zucchini. Epic fail.

So when a friend of mine suggested I make spaghetti squash, I was very reluctant.

Don’t be reluctant…it’s amazing.

And the best part – I seriously found a way to make it taste like fettuccine alfredo!

Here’s what you need: 

1 medium-sized spaghetti squash

2 tablespoons butter (yes real butter – don’t be afraid)

4 gloves of garlic, finely minced (completely okay to use the jar here)

2 tablespoons whole wheat flour (here’s where the carbs come in but is not much)

1 1/2 cups of half and half

2 tablespoons cream cheese

1 cup grated parmesan cheese (I used the shredded kind from the bag).

Okay, so break out your Instant Pot. This is the best way to make spaghetti squash.

Start by slicing your squash – if you need help – poke a few holes in it and microwave for 5 minutes. Cut it open and remove the seeds.

Grab the rack for the Instant Pot and place it in the bottom.

Pour 1 cup of chicken stock in the bottom (I don’t know why but I like using chicken stock here instead of water)

Salt and pepper your squash and rub with a little bit of olive oil.

Place the halves in the instant pot – anyway they will fit.

Press the “Manual” Button and adjust time to 10 minutes.

After 10 minutes go ahead and force release the steam.

Presto! It’s done.

Scrap out the “spaghetti” from  your spaghetti squash and grab a deep frying pan or pot to make your sauce.

Start by melting your butter over medium low-heat.  Once hot add your garlic and sauet till fragrant (about a minute or son).  Whisk in your flour…don’t worry its going to look like wet sand).  Whisk in the half and half and keep whisking till no lumps remain.  Add in cream cheese and melt.  Remove from heat once smooth and add in parmesan, and salt and pepper it to taste.

If its too thick, add in some more cream.

Throw in your spaghetti squash and mix to combine.

I served mine with some chicken. YUM YUM YUM !
